How it really works: restaurant hosts

Every so often we get a glimpse of how things really work, without the cautionary impulse and spinning that takes over when people are talking to the media. Eater LA picks up the instructions — including how to treat "Mexican people" and VIPs differently — given to the front of the house staff at an unnamed Mexican restaurant in Orange County. Sample:
